Mushroom Soup (Russian Style)

Ingredients:

  • 1 lb fresh or 2 oz dry wild mushrooms (porchini, hen of the woods, driad's saddle, red cap boletes or any other mushrooms you prefer)
  • 2 L water
  • 3-4 potatoes
  • 1 onion
  • 1 carrot
  • 50-100 g noodles
  • 2 tbsp olive oil
  • salt and black pepper to taste

Directions:

  1. Wash mushrooms, cut to half inch pieces. If using dry mushrooms, place them in a bowl, add boiled hot water to cover the mushrooms and let them stand for about 30 minutes. Strain the liquid through fine strainer into a pan. Add more water to 2 - 2.5 L.
  2. Cut re-hydrated mushrooms and set aside.
  3. Cut peeled potatoes to half inch cubes.
  4. Place pan on medium heat, add potatoes and mushrooms and let it get to boil lightly.
  5. Add salt a pepper and let it boil for 10 minutes
  6. In a madium skillet, heat olive oil over medium-high heat, add grated carrots and chopped onion. Cook until onion turn golden. Add mixture to the soup and let cook for another 10 minutes.
  7. Add noodles and cook for 5 minutes.
  8. You can add fresh chopped greens, like parsley or dill, if desired. Enjoy!
