Mushroom Soup (Russian Style)
Ingredients:
- 1 lb fresh or 2 oz dry wild mushrooms (porchini, hen of the woods, driad's saddle, red cap boletes or any other mushrooms you prefer)
- 2 L water
- 3-4 potatoes
- 1 onion
- 1 carrot
- 50-100 g noodles
- 2 tbsp olive oil
- salt and black pepper to taste
Directions:
- Wash mushrooms, cut to half inch pieces. If using dry mushrooms, place them in a bowl, add boiled hot water to cover the mushrooms and let them stand for about 30 minutes. Strain the liquid through fine strainer into a pan. Add more water to 2 - 2.5 L.
- Cut re-hydrated mushrooms and set aside.
- Cut peeled potatoes to half inch cubes.
- Place pan on medium heat, add potatoes and mushrooms and let it get to boil lightly.
- Add salt a pepper and let it boil for 10 minutes
- In a madium skillet, heat olive oil over medium-high heat, add grated carrots and chopped onion. Cook until onion turn golden. Add mixture to the soup and let cook for another 10 minutes.
- Add noodles and cook for 5 minutes.
- You can add fresh chopped greens, like parsley or dill, if desired. Enjoy!
